Old vines of between 30 and 80 years
Terrain: Poor terrain with clay, sand, pebbles and panal (fossilized sand dunes). Altitude of between 300 and 700 m. Yields of 2000-4000 kg / hectare.
Vinification: Pellicular maceration at 8-10 ºC for 2 days. 30% is fermented in new French oak barrels at low temperature and 70% in stainless steel for 4 weeks at very low temperature (12 ºC) in order to preserve the refinement and fruitiness of the grapes.
