Single vineyard Pedro Ximénez from grapes grown in their own 7ha Jerez Superior vineyard in the Pago Montealegre.

The grapes are dried in the sun for 10 days, then carefully pressed, partially fermented and fortified, then oxidative aging before bottling en Rama at an average age 4 years.
