Vineyards:
The vineyard is relatively young but of exceptional quality, cultivated from mass-selected vines adjoining the Oxer estate. In a sense, this wine could be called the "wine of his garden," grown right next to the winemaker’s home.
Winemaking:
The wine undergoes fermentation with native yeasts in large, used 1000-liter French oak foudres, followed by malolactic fermentation. It is then aged for 10 months in used 600-liter barrels, allowing for a refined, yet subtle oak influence.
What’s in a Name:
"Manttoni" is a name inspired by folklore, referencing an elf from ancient Basque traditions, symbolizing a spirit of rebirth and renewal—much like the wine itself, a product of the rich, old-world terroir and modern winemaking innovation.
