From Doroteo’s grapevines at the Pago de los Capellanes estate in Pedrosa de Duero. 90-year-old Tempranillo vines planted in poor, gravel-covered clay loam soils with low productivity.
Production
The grapes are hand-harvested and then rested in a cold chamber before being processed. To extract the maximum expression from the grapes, they undergo fermentation at a strictly controlled temperature. After fermentation, the wine is removed from the vat for drawing off. Then the wine is aged for 36 months in 225-litre, extra-fine grain French oak barrels, with at least another 24 months of cellaring in the bottle.
Tasting Notes
Underscored by loamy earth and smoke accents, this dark and brooding version displays muscular tannins knit with generous notes of plum sauce, steeped black cherry, balsamico, and mocha. Long and creamy on the palate, offering a chewy finish of spice box and bay leaf notes, with a subtle tang of orange peel.
