Aging
Biological under the “flor” film in American oak casks in our bodegas of Jerez de la Frontera, by criadera and soleras system, hallmark of Sherry (Jerez). Aged 5-7 years.

Fermentation
In American oak casks at a temperature between 22°C and 24°C for a period not exceeding 10 days.

Tasting Notes
Color: Warm golden brown.

Aroma: Mineral notes and pungent with delicate hints of grapefruit and lemon peel.  

Intense, dry on the palate and very persistent taste.
