Soil
Single vineyard called “Dolomitas”. 700 meters over sea level. Soil located at the foothills of the Dolomite mountain, is very stony (due to the Dolomite erosion), rich in magnesium, and very close to the mother rock (the tap calcareous). There is no deepness in the soil and the roots are developed in the mother rock, providing a minerality, freshness, and finesse to this wine.
Winemaking
The harvest is manual. The work at the winery is limited to a minimum: wild yeasts, light battonages, a minimum amount of sulfites and light filtration. Alcoholic and malolactic fermentation in old concrete deposits from the c. XVIII where the friars used to elaborate wine. Aging the wine for 10 months in old concrete deposits and anfors.
