Intensely bright pale straw yellow with green reflections. On the nose it reveals a strong perfume of white flowers and aromatic herbs on the back (lemongrass and thyme) rounded off by white plum sensations. On the palate one is greeted with a noble attack with fresh citrus sensations of lemon and white fruit (apple and pears), saline notes and wild flowers ending with a long and never-ending finish.
Own vineyards (8 hectares) and leased vineyards under own control and management.
Mainly granite, some properties have schist and slate.
Rigorous control vineyard with manual harvest in 15 kg crates. Immediately transport to the winery where the grapes are chilled to 5°C in a refrigerated chamber. Hand selected on a vibratory table. De-stemmed and skin-soaked then proceed to pneumatic pressing for 1.5 hours. Separation of juices followed by static racking fermentation at controlled temperature. Aging on fine lees from minimum of 5 months. Stabilization in stainless steel vaults until the optimum maturity is reached and then bottled.
