Vineyards
Selection of parcels in our Santa Gadea vineyards. Chalky-clay soil, very poor fertility and low yield.

Production
Following a short cold pre-fermentation for 6 days below 12ºC, a controlled alcoholic (primary) fermentation is initiated, with seeding using our selected yeasts.

Fermentation takes place in stainless steel tanks with pumping over and two controls per day for density and temperature. At the end of this fermentation period the malolactic fermentation begins without the addition of bacteria, at a winery temperature of 22ºC for 24 days. 

The wine is transferred by separating it from the lees without filtering or clarifying. The wine is then rested in 300 liter French oak casks for 5 months.

Tasting Notes
Clean and brilliant cherry color, with an intense floral and red forest fruits aroma, together with light spicy hints. In the mouth it is full-bodied, fresh, persistent and velvety.
