Production
Traditional Chapenoise Method.

After the careful collection of the clusters, they are destemmed and deposited in the tanks where a cold pre-fermentation maceration is carried out for 5 hours. Subsequently, it is pressed to extract all the must and the static settling proceeds. Alcoholic fermentation was carried out in a 1000 liter tank. Fermentation lasted 25 days at a controlled temperature of 14-16ºC. The wine remained in contact with its fine lees for 5 months to extract the maximum mannoproteins, making continuous batonages. This base white wine was bottled for a second fermentation in the bottle in centuries-old stone cellars. Alli remained in rhyme for 24 months of aging on lees. Finally, a manual disgorgement was carried out.
