Production
Born to value an excellent raw material, ESCALADA is a chaotic product in which the native yeasts ferment without temperature control in casks of chestnut and French oak, wrapping the Godello in its lees with a soft battonage that develops only until the end of fermentation.

Elaboration
Static debourbage and spontaneous fermentations in deposit. Then it goes to a used barrel (750 liters) of French oak, where it will only ferment with battonage, clarification, maturation in stainless steel and bottling.

Aging
Aging in steel without lees for seven months and later in bottle.

Tasting:
Of a pale gold color, its movement in the glass makes us presage a wine with a body and a dense mouth, which envelops each palate.

On the nose the terroir disappears to leave room for a memory of lactic and orange blossom mixed with notes of fennel and pastry as it is opened.

The entry into the mouth is dense, but with good acidity and good persistence.
